Pulled Lamb’s Leg Lettuce Wraps with Tzatziki and Tomato Chutney

I just saw a picture of this dish and since I can’t eat carbs with my Keto diet,  lettuce instead of pita seemed as the perfect idea. Lettuce can and will be used as tacos too.

It’s fairly simple to make but cooking the meat and the final preparations take a bit of time.
I used pulled meat with this recipe, but you can use sauteed ground beef and meatballs.

About an hour before serving the dish, you can start making the Tzatsiki Sauce. You can find a very good recipe here but I’ll explain the real quick way to make it.
Ingredients for Quick Tzatziki Sauce:
  • 2-3 Cucumbers
  • Handful of fresh dill
  • 1 clove garlic
  • Lemon juice
  • Salt
  • 2 cups yogurt
Put everything but the yogurt in a food processor and make into a puree. Wait 5-10 minutes for the lemon juice to infuse with the ingredients. Take the mixture out of the processor and sieve all the juice out of it. When you have sufficiently dry mixture, mix well with the yogurt and add little bit of olive oil. Put in the fridge and let the tastes mash for about an hour.
So after boiling the meat, using two forks pull the meat part into fibers. Using a hand blender I turned the stock and the veggies into a very quick gravy. Pour some of the gravy over the pulled beef so that they stay moist.
Ingredients for Tomato Chutney:
  • 2 big tomatoes (chopped into tiny cubes or chopped finely)
  • Garlic
  • Handful of basil
  • Olive oil
  • Lemon juice
  • Salt
In a separate bowl mix all the ingredients and let them join tastes.
When plating, place the lettuce like cups, put some meat, chutney and the sauce. Since lettuce does not absorb juices like a bread would, it’s a bit runny but so delicious nonetheless.
