Warm Cabbage and Spinach Salad with Grilled Chicken

I was bored and hungry at lunch time a few days ago, this is just a quick little dish that came together on it’s own.

Ingredients:

  • 2 boneless chicken thighs
  • 2 cups shredded cabbage
  • 2 cups of spinach
  • 1 cup semi-crushed walnuts
  • Oregano
  • Rosemary
  • Thyme (optional)
  • Olive oil
  • Salt & pepper

In a pan put cabbage on medium heat with olive oil. Cu up chicken in small bits and either sear in a pan or grill them with oregano or thyme.

Add the spinach, walnuts, oregano and rosemary in the cabbage pan. Season both pans to your liking.

Don’t overcook the vegetables, when the spinach are just a little darker green, take off the heat. Put in a plate. When the chicken are cooked, place over the veggies.  And voila! Quick warm salad with soft juicy chicken. Enjoy.

Don’t over cook the cabbage, you can monitor it by the spinach. Spinach cooks really fast, when they start to change color, take off the heat.

Delicious and nutritious salad. The walnuts gave a nice and refreshing nutty taste. With the walnuts and the veggies that still have their crunch, it is a mixture of textures.
