I’m back with an old dish of mine, this very superb, very easy recipe of Ratatouille.
I assure you it is very easy and very tasty.
- 1 liter grated tomatoes or 1 liter pre-grated tomatoes.
- 2-3 cloves of garlic
- 2 medium sized zucchinis
- 2 medium sized aubergines
- 1 onion, chopped or 1 onion’s worth of frozen chopped onions
- Fresh thyme
- Salt & pepper
That’s all there is.
Get an oven-proof dish. This dish will be the pan that you prepare, cook and serve the Ratatouille, so pick a good one if you prefer.
Pour all the grated tomatoes directly in to the dish, add onion, garlic, salt, pepper and a little bit of fresh thyme chopped finely.
Mix everything with the help of a spoon and make sure the mixture covers every part of the bottom of the dish.
Put the dish aside and start chopping your zucchini and aubergine. You can use a kitchen robot or quick slicer fir this but if your’re slicing by hand, make sure the pieces are same thickness. This is a very essential part. Slice the veggies into even circles. I sliced mine by hand so they are not very consistent. If you slice them very thinly that will shorten you cook time, keep that in mind.
It is time to place the veggies in the pan. Starting from the outside place the veggies in a sequence of one aubergine and one zucchini until you finish a ring on the outer side of the dish. Now start the same technique, on the inner part of the ring you just put. Ring by ring go around the dish until you don’t see the tomato mix you have put on the bottom.
Sprinkle salt, pepper and a little bit more fresh thyme over the veggies and pour some olive oil over them. Make sure you pour the oil through a thin opening and that way you can get the oil over all of the veggies.
If you are cooking immediately, put the dish in the pre-heated oven with 190°C and cook for 20-25 minutes. If not you can put the dish in teh fridge and cook whenever you want.
While cooking I do recommend to get a large piece of baking sheet. Crumble it in your hands and run in under water. Smooth it out and cover the dish with it. This way you make yourself a make-shift lid for the oven-dish.
This method helps to create a steam effect and help your dish to cook a little bit faster. It works best with vegetables and you can apply this technique to your pans as well, not just oven dishes.
