Vibrant Root Salad

I got this idea from one of Jamie Oliver’s salads, which he claims to be his absolute favorite. Though I changed it a little because I didn’t fancy a yogurt based dressing, that was the original recipe.


  • 3 small beetroots
  • 2 medium radishes
  • 5-6 baby carrots
  • A few mint and basil leaves
  • 3 tablespoon lemon juice
  • Lime juice (optional)
  • 3 tablespoon of olive oil
  • Salt

If you have a food processor with a grater appliance, then this is the easiest recipe.

Grate all the vegetables and place in a plate.

In a small jar, add olive oil, lemon juice, herbs chopped finely. You can add the baby carrots in there too, they taste better when they are coated with the dressing.

Shake the jar until everything is mixed and pour over the vegetables. Give is a good toss. Refreshing and quick root vegetable salad is ready. Enjoy.

If every bit of the dressing won’t pour out, put a little bit of grated Β radishes inside and let them soak up the dressing before emptying the jar on the salad again.
Look at those colors! No filter here. I squeezed some lime juice over the finished plate to add to the acidity of the dressing.
