Indian Spicy Chicken on a Zucchini Bed

What to do when you’re feeling adventurous and you have chicken with lots of spices? Pseudo Indian chicken dish, of course!

Ingredients for the spice rub:

  • 1 chicken breast
  • Turmeric
  • Red pepper flakes
  • Ginger powder
  • Curry powder
  • Dried mint
  • Oregano
  • Salt & pepper
  • A pinch of spicy Indian tikka masala mixture, I had this small packet of store-bought spice lying around in my kitchen drawers and decided to put it to use but it had a little more heat than I’m used to.

Mix all the spices in a small fridge bag, shake to have a homogeneous mix.

Preparing rubs or marinates in bags will save you the extra dirty dishes to clean after cooking.

Cut up the chicken breast into small cubes. Put them in the spice bag and coat every side of the chicken thoroughly.

Give it a good shake.

Ingredients for the sauce:

  • 1 small onion
  • 1 clove of garlic
  • 1-2 tomatoes, grated
  • 2 tablespoon heavy cream
  • Olive oil
  • Salt & pepper
  • A little bit of spring onions and grated mozzarella cheese for garnish

Cut the onions and saute them with olive oil. After a minute or two, add the crushed garlic and the chicken. When the chicken look cooked add the tomatoes and let the sauce cook for a while. A minute before taking off the heat, add the cream to ease the heat of the sauce.

Since the chicken are cut up really small, the cooking time decreased too. Making this very quick to prepare.

Since this is a very saucy dish I served it on zucchini ribbons. It both gave take to the zucchini and the vegetable took some of the intensity of the Indian curry. You can find my recipe for that here. It’s a quick and delicious dish that you can modify however you want. Enjoy.
