Chicken Shish Kebabs with Broccoli and Zucchini Sides

Are you ready for another traditional Turkish food? Yeah? It’s shish kebab time! Actually it’s weird to call it that because we don’t call it kebab just chicken shish. What is considered kebab is usually beef and lamb centric dishes. Adana and Urfa kebabs are made with spiced ground meat and Iskender Kebab is special doner on a bed of Turkish pita bread with tomato sauce on top and yogurt on the side. Enough about kebabs, let’s get back to chicken shishs.

I tried marinating the chicken a day before to make them extra soft. I used:

  • Milk
  • Rosemary
  • 1 lemon’s juice
  • Olive oil
  • Salt & pepper

What I basically did here is making buttermilk but I prefer to apply the lemon juice directly to the chicken to start the cooking process with the acidity. put everything together, cover the bowl and marinate for a long time. I chose to wait 24 hours but you can wait longer if your container is healthier.

24 hours later….

You’re now ready to start the actual cooking. The whole ingredients I used for the dishes below is:

  • Chicken
  • Green peppers
  • Tomatoes
  • Zucchini
  • Cheddar cheese
  • Broccoli
  • Olive oil
  • Salt & pepper

You will also need skewers. It’s really simple, all you do is skewer the chicken tomato or pepper and chicken again. Repeat this until every skewer has enough number of ingredients you want. You’re set to go, you can either grill or sear the shish on the pan, fyi I prefer grilling.

For side dishes I steamed broccoli and my brother prepared Baked Zucchini slices, by frying the slices first then putting them in the oven with cheese top, just enough to melt the cheese.  And of course we had delicious Cacık for salad. Enjoy.
