Mom’s Ratatouille with Ground Beef

Continuing on the summer theme, here is another of my mom’s quick creations. It’s more or less like a ratatouille but with her own twist. Ingredients:

  • 2 slim aubergines
  • 200 gr ground beef
  • Green peppers
  • Red peppers
  • 1 onion
  • 2 tomato
  • Salt & pepper

Slice the aubergines and place them on a baking sheet, bake for 15 minutes. When they are close to taking out of the oven, saute ground beef with olive oil. Then add the chopped onion, chopped peppers and grated tomatoes, saute together. When the aubergines are done, place them on the pan over the mix. Add water just shy of covering the aubergines and cook together with the lid closed. If you think after 10 minutes, the water is too low, then add some more but make sure to cook at least 15 minutes more after that. It’s quick and easy and a great idea for utilizing ground beef. I’m sure I’m going to make it myself too.
