Warm Zucchini Salad with Walnuts

Hello from holiday!!

Yes I just went on holiday to visit my family in our summer home in Çeşme, Izmir. For the next 10 days my posts will have a holiday theme.

Since this is our family home I’m not the only cook in the kitchen. This here is my dear mom’s creation, it actually is more like a Circassian Chicken but zucchini instead of chicken. Best part? It’s super Keto friendly.


  • 2 zucchini
  • 2 cucumber
  • 1 cup walnuts
  • Handful of fresh dill
  • Olive oil
  • Salt & pepper
  • 2 cup yogurt (with garlic) (optional)

Grate the zucchini and place in a pan with a little olive oil. When you believe they are just cooked and soft enough, take it off the stove into a bowl. Grate the cucumber. Drain the juice by squeezing and add to the zucchini. Crush the walnuts and chop the dill, add them too. Mix everything together with a drizzle of olive oil and salt and pepper.

We ate it like this but if you prefer my mom informs me that it is also good mixed with garlic yogurt. The warmness of the zucchini is a very nice contrast to the crunch of the cucumber and nuttiness of the walnuts. This is a perfect side dish.

These are the rest of the dinner.  Warm zucchini salad, regular salad I made, cooked purslane, simple paste, mom’s version of ratatouille and of course yogurt. Normal dinner for six in our household.
