I’ve told you about using cauliflower instead of rice grains but now it transforms completely into a rice side dish!
It’s so simple, you can prepare it before hand and use whenever you want. Plus, it’s super heaşlthy and let’s face it, a difference in your kitchen.
- 1/4 Cauliflower
- Olive oil
- Salt & pepper
What you need to do is, break cauliflower into small bits. Than put all of them in a food processor with a chopping tool or option. Run them through the processor but don’t work the processor too much and turn the vegetable into a mash. A few small chunks are welcome.
If you like you can do this with a whole cauliflower and then put in Ziploc bags and store them in your freezer or fridge. Whenever you want rice, your cauliflower will be ready.
Now three are several ways to cook your rice.
1. Easiest way is to put the amount you have in a microwave safe bowl and microwave for 5-6 minutes. They will cook really fast, be careful.
2. Another way is to heat up olive oil in a pat and put them cauliflower directly on the pan. You will have yourself a fried rice of some sort. In that version, you can add onion, carrots, peas and the like so you will have a dish on its own.
3. My way is to boil the cauliflower in a sauce pan with salt and pepper, for 1 to 2 minutes. Drain them really good and sizzle some olive oil in the pan. Add the cauliflower with more salt and pepper and sort of fry them until you’re convinced they are rid some moisture.
