Almond Flour Cherry and Lemon Zest Biscuits

Here is another Almond flour recipe. They were very tasty when they were hot from the oven. as an addition to this recipe, I would recommend sweetener (Splenda) instead of honey to make it both sweeter and more Keto friendly.

I found the recipe from Urban Poser but modified it a little bit.

  • 1 + 1/2 cups almond flour
  • Plus some flour for your bench
  • Pinch of salt
  • Pinch of baking soda
  • 1 tablespoon coconut oil (or other oil of choice)
  • 1 egg
  • 1-2 tablespoon honey or 1 teaspoon of Splenda powder
  • 1/4 cup of cherries (fresh or frozen)
  • Zest of one lemon (lots of zest)

Mix the wets and drys separately and then combine them together to transform into a dough. Add the fruit gently but be careful not to mash them. Wrap with cellophane and put in freezer for the dough to rest.

After 30 minutes, take the dough out of the fridge. If your dough is not fully non sticky, use two non stick baking sheets to form them into biscuits. I rolled the dough and cut it into small bites.

Bake them for 10-15 minutes at 180Β°C. Keep an eye on them after the 10 minute mark, so that they don’t brown too much on the outside.

They are best eaten warm out of the oven so make sure your hot beverage is ready to company your newly baked goods. Enjoy.
