Since there is no flour in Keto diet, I keep looking for alternative recipes to prepare.
The best substitute for flour is Almond Flour and milk substitute is Coconut milk. When you have those two, you can practically make anything.
Here I found an Almond Flour Pancake recipe just made a few adjustments myself.
- 1 cup fine ground blanched almond flour
- 1/4 tsp baking soda
- Tiny pinch of salt
- 1/2 teaspoon cinnamon
- 1 egg
- 3-4 tablespoon coconut milk ( regular milk will do just fine )
- 2 tablespoon honey
- 1 tablespoon vanilla or juice of half a lemon
- 1/4 cup fruit (optional)
- I used frozen and then thawed cherries but blueberries was the original recipe
The mix the dry and wet ingredients separately, then add the wets to the drys. Since the final mixture is very runny be careful flipping the pancakes on the skillet. As the recipe suggested I made small portions and they turned out very nice. For me it was a little bland because I couldn’t garnish my plate with fruit or maple syrup. For future recipes you can substitute Honey with artificial sweetener. Keep almond flour inn the corner of your mind, just the aroma filled the kitchen was enough the trouble. Enjoy.
