Zucchini Quiche
My big aunt thought me how to make this. This is the easiest and quickest appetizer I’ve made. It’s very suitable for 5 o’clock tea. It doesn’t have flour in it but Turkish thin layered pastry that is called yufka.

Therefore it’s very light with only

  • 1 Yufka,Β pulled into small piecesΒ (If you don’t have it, 1-2 tablespoons of flour will do just fine)
  • 2-3 Zucchinis, grated
  • 1-2 eggs
  • 1 teaspoon baking powder
  • 2-3 tablespoons of grated cheddar cheese

Most of the ingredients don’t have a specific amount because you need to mix everything together and look at the texture. You shoul have a cupcake batter-like texture. So if the zucchini is too much just add the second egg. At the end put the mixture in a oven proof pan and bake for 15-20 mins.

It is good both hot from the oven and when it’s heated after a couple of hours. I like it best with 5 o’clock tea. Enjoy.
