I always wondered how butter poached lobster was when I saw fresh shrimps at the fish store decided to make butter poached shrimp instead. The method is very easy but detailed.
Butter Poached Shrimp:
- 1 table spoon of water
- 1 stick of butter cut into small peices
- Salt & pepper
Gradually add butter cubes in a sauce pan with a spoon of water, whisking continuously. Don’t let the butter melt, keep the liquid at a bright yellow color. If the butter turns into clarified butter, you are just cooking in butter not poaching. I seasoned the butter with salt, pepper and crushed garlic.
