This is what happens when you are bored late one night and have too much nectarines in your pantry.
I found the recipe as I was searching simple peach muffins so here is the simplified version.
- 3 cups flour
- 2-3 teaspoon cinnamon
- 1 teaspoon baking powder
- Pinch of salt
- 1 + 1/4 Vegetable oil (any would do fine)
- 3 eggs
- 2 cups sugar
- 2 cups nectarines, mashed
As always, combine the drys and wets separately, then mix the wets with the drys. Leave the nectarines for last, do that they won’t be smushed so much. Put them in muffin papers of your choosing. Bake for 25 min at 200°C. Since I used very tine cups, it took even less time to bake, so keep an eye on them nevertheless.
They are fun for any time of the day, just don’t leave them exposed to air for long duration. The tanginess of the nectarine balances the sweetness perfectly. Eat with a hot beverage or cold milk, there is nothing better. Enjoy.
